It's funny because I couldn't bear her since I know her. But I watched the show with the german dub!
A few weeks ago I started to watch the show with the original voices. That's when I start to like Jessica as well.
With the german voice she seems to be much more arrogant, so she gives you no chance to like her even if she's a friend of the ghostbusters. That's a much different feeling than watching the show with the original voices where she acts more naturally and likeable. Since watching the original version I can accept her. I think she's okay. 
It's funny how the voices make the difference.
By the way, Jessica is the only charakter who has this negative effect on me regarding the german dub.

I think Jessica is 100% important to the series and essentially a pivotal character because she is the NORMAL woman thrown into this fantastic and hallucinating universe. She is the human perspective, the "average" human being involved into this mind-blowing battle beyond space and time. So, in a way, Jessica represents us. Everyday she must deal with superpowered pink bats, mutant gorillas, spectral dimensions and things like the Skelevision. She is a a very rationale person fully immersed into an unlogic world.

I've always had a soft spot for Jessica. And you're right saying that she's the most "normal" person from the show.
