By the evidence in the show, Jake and Jessica are at the very least, dating. There could be more behind the scenes we're not seeing regarding their relationship (It would be nice to have another Kong ghostbuster next in line for the business. A Spenser too, but Eddie Sr. was hesitant on letting Eddie Jr. be one to begin with so that remains to be seen). I think sometimes we don't see their interest in Jake & Jessica in some episodes because of the 'get-down-to-business' like nature of those episodes. If those episodes extended beyond the action, perhaps there would be something. There's some very 'subtle' hints in some episodes too--a look between them, hands being held, etc. There's the hand-holding between Jake and Jessica towards the end of the episode in "Statue of Liberty" which is another hint to their relationship. He also had a look and maybe (I can't seem to freeze the frame in the right spot to see for sure) an extremely brief, hand holding moment with Jessica in "The Looking Glass Warrior" too.
Jake seems to have a bit of a crush on Futura and Futura definitely does of him. But that'd be complicated given the massive time and potential evolutionary differences between Jake's time and Futura's. I mean, think about the offspring issue. If Futura had a kid by Jake...how would that work? What time frame would the kid be in? If the kid lived in Futura's time or vice versa, how would it explain the missing, yet occasionally visiting parent? "Yeah, my dad lived 1000 years ago, but he jumps time to visit me sometimes." or in Jake's time, "My mom doesn't exist yet, but she sometimes travels from her future time to visit." That all sounds so WEIRD! And if the kid made up something to cover for the missing parent, then the poor kid's being told to lie to his/her friends, etc.--not a good moral lesson.
Tracy...difficult to say. He definitely wasn't interested in that female gorilla in that one episode.
**Edit** In the series 'bible', Tracy's character description states he was interested in Futura. While many things changed from this initial 'bible', here's the quote in his description. "But Tracy's fondness for Spenser and Kong pales beside the gorilla-sized crush he has on the frequent fourth member of the Ghostbusters..." and that quote trails into Futura's character description. So, I guess Tracy sees himself more 'human-like' than animal perhaps?

I always sensed that "something" was going on between them, extending beyond the mere "man/woman attraction". Yes, I definitely think they were dating at the time, but not constantly as you think. It was an early phase. They were still getting to know each other. "Yeah, my dad lived 1000 years ago, but he jumps time to visit me sometimes." Hahaha so weird and funny. Well, at the end of the day, it doesn't truly matter, because the Ghostbusters timeline is fixed and cannot be altered in any way. So any "temporal" anomaly was already part of history and it occured the exact way it always occurred.

The very next episode (second to the last in the series), "Maze Caves", Jessica takes Jake out as a treat for his upcoming birthday to that fancy burger place that required reservations. The other interesting tidbit I discovered while going through the episodes is that Futura is not seen in the entire last quarter of the series, whereas Jessica is in many of them. The only way to know for sure with where this love triangle went would be additional seasons of this show. One season doesn't dive deep enough into character development, but this series gave more hints than many even do in several seasons.
Using other cartoon triangles as reference that were produced in the same decade (Star Blazers, Robotech, Voltron)...the FGB triangle is following a similar path. But, like I said, the only way to know really would be if there were more seasons of the series.

I absolutely think there's no triangle, because Futura could secretly be interested into proposing herself to Eddie. I agree with you, Jake and Jessica's relationship could have evolved throughout the series.

Well, that's very true--Futura could be interested in one of the others. The 'bible' says Tracy has an interest in her as well, but I really don't know how that would work inter-species. It also mentions in Futura's character description that her interest in Jake is "slightly more than professional." This is also mentioned for Jessica in one of the promotional bits on dvd. But, I agree, Eddie needs some loving too!
The 'triangle' is only mentioned for the fact that it is what we see-- Futura kisses Jake, Jessica kisses Jake, and Jake accepts and returns the favor with both. But the triangle is slightly skewed and leans towards Jessica since she and Jake are going on dates. We do see a different reaction from Jake when, well, Madame Why does the same when he rescues her from Hauntquarters...heehee. The fact that Futura and Jessica get along so well with each other thwarts the 'triangle' to some extent. The two 'competitors' in other 80's cartoon triangles don't seem to get along that well.
